Salmon Poke Bowl

Salmon Poke Bowl

Serves 4

Ingredients:

  • 1 pound sockeye salmon, cut into ¾-inch cubes
  • ¼ cup soy sauce or tamari
  • 1 teaspoon rice wine vinegar 
  • 1 teaspoon sriracha 
  • 1 teaspoon sesame oil
  • 1 cup sushi rice
  • 2 ripe avocados, peeled and sliced thinly 
  • 1 cup purple cabbage, shredded
  • 1 cup sliced radishes, sliced thinly 
  • 2 carrots, shaved
  • 1 cup edamame
  • *Optional seaweed salad  
  • Sesame seeds as garnish 

Instructions:

  • In a medium-sized bowl combine diced salmon, soy sauce, vinegar, sriracha, and sesame oil. Cover and refrigerate for 1 hour.
  • Assemble bowl starting with rice on the bottom, then place veggies and salmon on top. 
  • Top with sesame seeds to taste.
