Thai Pork Chops with Roberta Paglia

1 lb. pork chops, bone-in, thin cut

1 to 1/2 cup pineapple chunksµ

1 Tbs garlic, ginger, shallot, chopped

1 Tbs lemongrass, chopped

1 Tbs brown sugar

1 lime, juiced

2 tsp fish sauce

1 tsp cumin, coriander, turmeric, all ground

Sriracha - big/little squeeze to taste

Put all ingredients expect pork in food processor and blend 30 sec

Add pork and liquid in air tight container and let marinade up to 24 hours, but at least 2 hours

Heat cast iron, when hot, add ghee or clarified butter, sear on one side 2 minutes until brown and caramelized

Sear the other side 1 minute, take off pan and let sit and tent with foil

Layer pork chops attractively and top with Mango Lime Salsa
