Grilled Shrimp Lettuce Wraps

Serves 8 

Ingredients 

  • 1 pound medium peeled, deveined raw shrimp
  • 2 tbsps canola oil
  • 2 tbsps rice vinegar
  • 1 garlic clove, finely chopped or grated
  • 1 piece fresh ginger, grated
  • 1 ½ tbsps soy sauce
  • 1 cup radishes, thinly sliced
  • ¾ cup cabbage, shaved
  • ⅓ cup carrots, thinly sliced
  • ½ tsp salt
  • ½ tsp granulated sugar
  • ¼ cup mayonnaise
  • ½ tbsp fresh cilantro leaves, finely chopped 
  • Cilantro leaves for garnish
  • 2 tsps grated lime zest 
  • 2 tsps fresh lime juice, separated
  • 8 Large Romaine leaves

Instructions: 

  • Preheat the grill to medium-high 
  • In a large bowl, make the sauce by whisking together the olive oil, vinegar, garlic, ginger, soy sauce, and salt. 
  • Add the shrimp to the sauce and mix to combine. 
  • Grill shrimp uncovered, about two minutes per side. 
  • In a medium bowl add shredded cabbage, radishes, carrots, lime juice, salt, and sugar. Toss to combine. 
  • In a small bowl, whisk the mayo, cilantro, lime zest, lime juice, and soy sauce together.
  • Assemble mayo spread, shrimp, and vegetable mixture on top of Romaine lettuce leaf. 
  • Garnish with cilantro.
