Grilled Shrimp Lettuce Wraps
Serves 8
Ingredients
- 1 pound medium peeled, deveined raw shrimp
- 2 tbsps canola oil
- 2 tbsps rice vinegar
- 1 garlic clove, finely chopped or grated
- 1 piece fresh ginger, grated
- 1 ½ tbsps soy sauce
- 1 cup radishes, thinly sliced
- ¾ cup cabbage, shaved
- ⅓ cup carrots, thinly sliced
- ½ tsp salt
- ½ tsp granulated sugar
- ¼ cup mayonnaise
- ½ tbsp fresh cilantro leaves, finely chopped
- Cilantro leaves for garnish
- 2 tsps grated lime zest
- 2 tsps fresh lime juice, separated
- 8 Large Romaine leaves
Instructions:
- Preheat the grill to medium-high
- In a large bowl, make the sauce by whisking together the olive oil, vinegar, garlic, ginger, soy sauce, and salt.
- Add the shrimp to the sauce and mix to combine.
- Grill shrimp uncovered, about two minutes per side.
- In a medium bowl add shredded cabbage, radishes, carrots, lime juice, salt, and sugar. Toss to combine.
- In a small bowl, whisk the mayo, cilantro, lime zest, lime juice, and soy sauce together.
- Assemble mayo spread, shrimp, and vegetable mixture on top of Romaine lettuce leaf.
- Garnish with cilantro.
