Salmon Poke Bowl
Serves 4
Ingredients:
- 1 pound sockeye salmon, cut into ¾-inch cubes
- ¼ cup soy sauce or tamari
- 1 teaspoon rice wine vinegar
- 1 teaspoon sriracha
- 1 teaspoon sesame oil
- 1 cup sushi rice
- 2 ripe avocados, peeled and sliced thinly
- 1 cup purple cabbage, shredded
- 1 cup sliced radishes, sliced thinly
- 2 carrots, shaved
- 1 cup edamame
- *Optional seaweed salad
- Sesame seeds as garnish
Instructions:
- In a medium-sized bowl combine diced salmon, soy sauce, vinegar, sriracha, and sesame oil. Cover and refrigerate for 1 hour.
- Assemble bowl starting with rice on the bottom, then place veggies and salmon on top.
- Top with sesame seeds to taste.
