Mozzarella and Tomato Salad

Serves 6


  • 1 pint cherry tomatoes, sliced in half
  • ¼ cup basil, chopped
  • 1 cup mozzarella balls
  • 2 tbsps olive oil
  • 2 tbsps balsamic vinegar
  • ½ tsp salt
  • ¼ tsp pepper

*Optional balsamic glaze


  • Place the tomatoes, mozzarella and freshly chopped basil in a large bowl.
  • In a small bowl, whisk together the olive oil, balsamic vinegar, salt and pepper. 
  • Pour the dressing over the tomato mixture and toss to combine. 
  • Add more basil or salt and pepper to taste. Drizzle with balsamic glaze if desired.
